    Findind a good grill restaurant in Lima is not an easy, first because la parrillada Peruana is commonly over seasoned and the quality of the meat after the hey days of the restaurants tends to decline allowable.
    Then is the cooking factor, is not common to find a grill restaurant that makes BBQ everyday, and to be truth to you people, after visiting Buenos Aires, grilled food for me it’s an Argentinian deal.
    So I went to El Gaucho y la Vaca, Dario Amaya make me feel that fresh and welcoming vibe that I felt during BBQ’s in Argentina with friends, unfortunately it wasn’t going to be for long, he had to take care of public relations, but he left Elias on his behalf, Elias is Dario’s right hand and former waiter of the place , he was to help me doing my orders because I was confused at making my orders, everything looks delicious and ofcourse it was, I was in a place of Argentinian food cooked by argentinians and didn’t knew what to ask for, so Elias a gentle man went to my help and spoke:
    No worries Mr. Yonathan I know exactly what you need. In order to try the best of the restaurant you might want to ask for a BBQ Bife Ancho, it has morcilla, anticucho, bife ancho, chori- all of our meet in one! I was surprised, he seemed to had red my mind and its tedious wants, what would you recommend for entrance? - a salad he answer presto – we have many kinds, like cesar’s, grilled salad and bell pepper, but for accompanying your BBQ I suggest the grill salad composed by fine vegetables like bell pepper, asparagus, white onions and mushrooms, You can’t miss it!- he said and added: besides that I will order a normal lettuce and tomato salad with fine herbs- I replayed – is there anything I must try during my stay? – ofcourse Mr. Yonathan, be adventurous- he said- and try our ‘’Papitas Nuevas a la Provenzal’’ I couldn’t be more satisfied, although tranquility brought ease to my worries, I still needed to sip some fine wine, suggestion arrived and couldn’t be more succesful.
    Before the dishes attacked my table with its imperial presence Dario Amaya came back from his meeting and joint me in conversation, after the protocol talk he expressed me his ideals referring to the tourist market, and his love for Peruvian people.
    ‘’We like to have people from all over the world, in fact during high season we have full tables and reservations all the time but during low season the average is very bad, this is why we take good care of the Peruvian public cause they’d always be here’’
    This confession surprised me greatly because till this day all I hear from other restaurants was: When are you going to bring tourists ?, undervaluing the concurrence of national public, not only this enhance my perspective, but also the news that the owner of the restaurant is Laura Borlini a famous Argentinian TV host, then I asked ; If the owner of the restaurant is on tv and talks about her restaurant all the time, why are you hiring 40Downtown for? His answer unraveled a bow from me to him, he said: Because 40Downtown has good ideas, and we like to support that.
    Before the tears start rolling down, the conversation continued and I got more information to nourished this very text, I realized that the municipality of Lima had invented ‘’The Gastronomic Circuit’’ a web of the best restaurants located in Lima Downtown, and ofcourse ‘’El Gaucho y la Vaca’’ is part of this adventure, the conversation went on and on till the dishes landed on my table along with the smoky scenes, the drifting smells and the 5 stars presentation, having all this dishes before me got me blessed and confused, I dint know from where to start, Elias suggested me to start with the grilled salad, I obey but my eyes couldn’t take the spears out of the grilled meat making those crispy noises of fat burning on top of the tray full of burning coal.
